Masterchef Paul Bocuse has created one of the most renowned kitchens in France and has put Lyons onto the gastronomic globe.
The town hosts the world’s most prestigious culinary competition, the Bocuse d’or, every other year.
“People often say that people in Lyons would rather eat themselves tired than work themselves tired”, says Sven-Gunnar Svensson, founder of Gastronomi Sverige and close friend of masterchef Paul Bocuse.
Masterchef Bocuse
Many people consider Lyons to be the gastronomic capital of France. Masterchef Paul Bocuse can be found here, winner of everything that a gourmet can win. He has five restaurants in Lyons, four of them brasseries named after the four points of the compass. The famous main restaurant, L’Auberge du Pont de Collonges, is located in the Bocuse family home, a few kilometres from the centre of town.
“Visiting L’Auberge du Pont de Collonges is a remarkable experience. But my personal favourite is L’est, an unembellished restaurant with a wonderful atmosphere and a menu that covers the world”, says Sven-Gunnar.
Bocuse d’or
Paul Bocuse is also founder of the world’s most prestigious culinary competition, "Bocuse d’or". The world’s most famous chefs meet in Lyons every other year to contest the gold medal.
“Bocuse is a fantastic chef who has contributed to real progress in the culinary arts. He was the first to open the kitchen to journalists and others interested in cooking”, says Sven-Gunnar. “He was among the first to realise that knowledgeable diners are just as important for the development and the creation of even higher cuisine as high-quality ingredients.”
Top-quality ingredients
The principal secret behind culinary Lyons is the availability of top-quality ingredients. The town is surrounded by superb wine districts, market gardens and top-quality livestock. And the world-famous Poulet de Bres chickens come from Bresse, just outside of Lyons.
“It’s usually said that good products create a good kitchen. Lyons benefits from an unusually comprehensive range of fine ingredients and long experience of cultivating them in the best possible way”, says Sven-Gunnar. “One thing you must do when visiting Lyons is visit one of the food markets.”
